As promised! Here is our delectable Crispy Roast Chicken recipe featured on page 21 in the January 2023 issue of Utopia Wellness Magazine.
Ingredients
š1 whole chicken
š§3 tbsp butter
š§1 tbsp garlic powder
š„1 tbsp curry powder
š§1 tbsp sea salt
ā1 tsp ground black pepper
š§ 1 tsp onion powder
š„µ1 tsp cayenne pepper
š¶1 tsp paprika
ššš§ 1 lemon, apple, or onion (optional)
šæ1 small bunch of rosemary (optional)
š„3 cups diced carrots
š„3 cups diced baby potatoes
š„¬2 cups diced celery
Directions
1. Preheat oven to 400Ā°
2. Wash chicken, pat dry, and place in pan
3. Separate skin from meat and place butter beneath the skin. Massage chicken to evenly disperse butter under the skin. (This is the secret to crispiness)
4. Chop up the apple/onion/lemon and place inside the chicken (if desired)
5. Mix all dry spices and sprinkle over the chicken
6. Add the vegetables to the pan around the chicken with about 1 inch of water
7. Garnish with rosemary (if desired)
8. Roast for 1 hour, basting every 15 minutes
9. Rest for 30 minutes before serving

TIP šØ save any leftover bones, veggies, and chicken for next monthās recipe. They freeze very well!
